Abstract |
According to EU Directive 64/433/EEC, macroscopic meat inspection consits of a basic mandatory inspection of the head, the plucks, the organs of the abdominal cavity, and the inspection of the split carcass. In suspicious cases, an extended examination of deep tissue lymph nodes is necessary. The single steps of the procedure are demonstrated.
