Procedures for the preparation of injera, the typical flat bread of the Amharic population in Ethiopia. Injera is made of Tef, a fine-grained sort of local cereals. To prepare injera, a leaven has to be produced first. The dough is poured on a heatened stone-plate, like a pancake, sealed with a cover and needs about 5 minutes baking-time. Injera is a soft, greyish bread with slightly sour taste. The film document was taken in a Weyto-village. The Weytos are Sudanese refugees, who entered Ethiopia during the Mahdi-rebellion in the last century.
