Abstract In der Diele eines niederdeutschen Hallenhauses mit offener Feuerstelle bereitet ein Kätner (Ausnahmefall, sonst Frauenarbeit) Teig für 14 Brote (à 5 kg) aus grobem Roggenmehl, Salz, Wasser und Sauerteig. Arbeitsvorgänge des Brotbackens: Anrühren, Säuern und Kneten des Teiges; Heizen des Backofens (freistehender Ofen im Garten) mit Holz; Formen, Gersteln und Einschießen der Brotlaibe; Ausziehen und Waschen der Brote.
The film shows the individual steps of bread baking: mixing, leavening and kneading of the dough, heating the baking oven, shaping and placing of loaves into the oven, baking, removing and washing of the bread loaves.
